Thinking of Creating "Massive" Storage Server

Alright, I've been mulling around an idea for a server for a while now. I haven't exactly ironed out everything I want to do with it or if some of the things are even possible (VM Server w/ Direct GPU Access (Nvidia GRID) for gaming on a dummy machine.), but I know that I need a lot of storage (Look at ~30TB usable) and was thinking of big drives (10TB+).

 

I don't know much about ZFS and know a little about standard RAID, apparently ZFS is software and a hardware RAID card gets in the way from what I've read. I'm thinking double parity would be best using large hard drives and I'm curious if RAID or ZFS setup would be better.

 

Let me know what you would recommend or if you need more info.

Edit: Also, would any of these options allow for further storage additions? That would be a huge plus.
