Replacing Raid 1 HDD's with SSD's - Migration question

Server Specs

Dell PowerEdge T620

Windows Server 2012 R2

2 x E5 2640 Procs

64 GB RAM

2 x 500GB HDD Raid 1 OS

6 x 2TB HDD Raid 5+1 Storage

Uses: Plex, VPN, BlueIris, Backups, File Sharing

I want to replace the OS HDD's with SSD's. I have 2 x 256GB Samsung SSD's.

Should I use SSD's in Raid 1? I've heard mixed reviews on using them in Raid 1 for a home server due to performance issues.

If I do end up using the SSD's in Raid 1 for the OS what would be the best way to migrate from the existing HDD Raid 1 to SSD Raid 1? Does Samsung Magician offer this capability? Can I just replace 1 HDD and let the array sync and when complete swap the other? Or should I just bite the bullet and re-install WS2012R2 from scratch? '); }
