Media Server help needed

Not sure how possible or feasible to do what I want.

I have a home with no internet connection. It does have a wired gigabit ethernet network set up, but there is no way to connect to the outside. In this home, I have a few TVs and a projection system.

I also have a decent size collection of Blu-Ray movies.

Home is Mac based - no Windows machines. Plenty of hard drive space available.

I would like to rip my movies into a computer and be able to watch them on the projection TV. Projection TV is set up with a 7.1 system AVR. AVR is connected (Cat 6) to the internal network.

The projector is a "must"... Ability to watch on other TVs in the home are a plus as is the ability to stream to an iPad (wirelessly on the same internal network) are a plus, but not necessary.

What is essential is the ability to keep blu-ray quality for video and sound.

This concept is a matter of convenience. Rather than look through my disc collection to decide what I want to watch, I want to be able to choose from anything via remote control. I don't need the menus and extras (I can pop in the disc for that) - only the movie itself without any quality loss.

I played around by converting a few discs to MKV. Haven't tried Plex, but did try something similar. Quality was horrible. Granted, I only tested it on a big screen TV, but I don't think the picture gets better on a bigger screen. Maybe I just had wrong settings in the rip or playback device.

Free/open source is great, but I don't mind paying if it will deliver on convenience and quality.

Any ideas? Is this possible?
