Please give me dumbed down instructions for audacity

I have used audacity quite a bit on PC, but that was pretty much importing old bootleg cassettes onto the computer to get them on my iPod. This was quite a few years and I haven't messed with it since.

I just installed it on my MacBook Pro tonight and I cannot even figure out where to start. First and foremost is that the drop downs give me no options (ex core audio, built in microphone).

At this point I mainly want to record audio from youtube videos and import it into iTunes. At least until I get familiar with the Mac (and more modern) version.

I can't even figure out where to start. I assume I need to add plus ins, but which ones? I tried downloading LAME and the download goes fine but gives some weird error message when I try installing it.

I have spent the night reading the wikis, but the articles really leave a lot to be desired. I really just need a short and sweet explanation of what I need to do and how to do it.

I appreciate any input on this, so thanks in advance.
