Strange voltage behaving(x299 gaming 7) probably reason for OC limit

I'am stuck with the oc of my 7820x and i think it has something to do with my voltage. If i let the voltage on auto(default bios) it has a vcore of 1.086V. When i set the v core setting on"normal" and put an offset off 50mV i get 1.275V mostly stable(some changings to the top and some to the bot+-10mV). That doesn't make any sense for me but i can work with that. So if i go higher like 55mV it starts swaping between 1.275-1.308V all the time. So now i'm not sure if i should go higher and ignore that or if i should stay.

My current Stable OC:

- VRIN 1.9V

- Normal Voltage offset 50mV(1.275V)

- MP = 49

- BCLK=100MHZ

- MESH= 3GHZ at 1V
