Question about NICs EEPROM

I've dumped my network card EEPROM with the EEUPDATE tool of Intel I wanted to know what is the format of this file (some documentation) ? (.EEP file)

Are there some hex editors which understand this file format ? to manually modify it and update/calculate checksums

Any tools to modify directly a NIC EEPROM without specific vendor tool ?

Can I modify the value of Sub Vendor,Device or Vendor of a card without being impacted (by the OS installing bad drivers for example ?) On which value(s) OSes base themselves to download/update drivers ?
